The sophisticated environment, attentive service, and a menu at the highest level, with specialities from the gastronomic traditions of Umbria and other Italian regions, make the Castle the ideal place for organising lunches, business dinners, cocktails...
Chef deserves a special mention. Gianfranco Pagliaricci’s origins are in Umbria, but his career has led him to move all around Italy and the world, even to disembark in distant Australia via Canada.
His passion for the kitchen is born of family tradition and his love for his native Umbria. His true Master was - his Mother, who taught him to cook the dishes of peasant tradition and to love the produce that he touched. These are the main characteristics that make our Chef the cutting edge of our Restaurant, and to whom we owe a large part of the success of our events.
His creativity, respect for ingredients, simple recipes, and quality and care in their presentation mean that he combines the tastes, flavours and colours “of yesteryear”, but reinterpreted with a touch of his unique magic.
